Chocolate Coconut Pancake Skewers


  • 1 1/2 cups gluten free pancake mix
  • 1 1/4 cups coconut milk or water
  • 2 tablespoons cocoa powder
  • 2 tablespoons shredded coconut
  • 1 tablespoon coconut sugar
  • 1 tablespoon coconut oil, melted
  • 1 egg

What you’ll need to assemble skewers:

  • Wooden or metal skewers
    Chocolate sauce (melted chocolate chips and coconut oil in a double boiler)


  • Mix all pancake batter ingredients together
  • Heat a pan with 1 tablespoon coconut oil
  • To make the pancakes small,
  • use a tablespoon spoon to measure out the batter for each pancake.
  • These pancakes will cook quickly
    Once all the batter is cooked into pancakes, assemble your skewers as you wish
  • Drizzle with chocolate and sprinkle with coconut.
  • Makes 4-5 skewers
